Through our cuisine we recover and valorize the biodiversity of the place we live in, selecting seeds of ancient horticultural varieties that are being studied scientifically and evaluated to be used gastronomically.


Each dish is a sensorial trip through the flavours of our terroir and is made with ingredients carefully selected by our chefs. Most of these
ingredients are grown in our organic farm and are exalted by our chefs with culinary creations that look at the future but with strong roots in tradition.
